Carrot Cake Mug Cake
Makes 1 serving
1/3 cup Proteinfull Baking Classic Yellow Protein Cake Mix (loosely packed, 44.5g)
1/8 teaspoon ground cinnamon
a pinch of nutmeg
a pinch of ginger
1 large egg white
2 tablespoons water
1/2 tablespoon oil or unsweetened applesauce
3 tablespoons shredded carrots
1 tablespoon chopped pecans
- Add cake mix and spices to a 12-16oz microwave-safe mug or bowl.
- Mix in egg white, water, and oil (or applesauce).
- Fold in carrots and pecans.
- Microwave for 1 minute 30 seconds (1000 watt microwave, adjust time for other wattages).
- Let cool and enjoy!
