Chocolate Frosting

Makes approximately 2 cups (enough to frost one 8-inch round cake or 12 cupcakes)
Ingredients:
2 medium ripe avocados, peeled and pitted
3oz sugar-free chocolate, melted
we recommend chocolate sweetened with stevia and erythritol or monkfruit
1 - 2 tablespoons confectioners erythritol, if needed
Instructions:
- Puree avocado in a food processor until smooth.
- Add melted chocolate, and process until combined.
- Depending on the sweetness of your sugar-free chocolate, you may wish to add 1-2 tablespoons confectioners erythritol (or other sweetener). Process until combined.
- Enjoy as frosting or as a pudding dessert! Store refrigerated.
To melt the chocolate, microwave at 15-second intervals, stirring each time. Once the chocolate is mostly melted and a few lumps remain, do not microwave further. Stir until completely melted.
