Cranberry Pecan Donuts

Makes 6 donuts

Donut ingredients:

⅛ teaspoon nutmeg
1/3 cup water
1 whole large egg + 1 large egg white
1 1/2  tablespoons oil or unsweetened applesauce
2 tablespoons pecans, chopped
2 tablespoons cranberries, chopped

Icing ingredients:

¼ cup confectioners erythritol, sifted for best results
2 teaspoons orange juice

Instructions:

  1. Preheat oven to 325F.
  2. Add nutmeg to dry cake mix, and mix to combine.
  3. Add water, egg and egg white, and oil (or applesauce). Mix until no lumps remain.
  4. Fold in pecans and cranberries.
  5. Spray the donut pan with nonstick cooking spray.
  6. Pour, pipe, or spoon batter into 6 donut cavities in pan.
  7. Bake for 12-15 minutes if using a dark, non-stick pan (we made 6 donuts). Add a few minutes if using silicone pan. 
  8. Let donuts cool completely. 
  9. Prepare icing by mixing orange juice into confectioners erythritol. Drizzle or pipe onto donuts.
  10. Enjoy! And store refrigerated.
