Peach Crumble Cake

Makes 2 servings

Cake ingredients:

2/3 cup Proteinfull Baking Classic Yellow Cake Mix (loosely packed, 44.5g)
1 large egg 
3 1/2 tablespoons water
1 tablespoon oil or unsweetened applesauce
1/3 cup cut peaches (fresh or frozen*)

Crumble topping ingredients:

3 tablespoons almond flour
4 teaspoons erythritol
1/4 teaspoon ground cinnamon
1/2 tablespoon butter, softened


  1. Preheat oven to 325°F (use an oven thermometer for best results). Line the bottom of an 8oz ramekin with parchment paper, then spray with non-stick cooking spray.
  2. Mix cake mix, egg white, water, and oil or applesauce.
  3. Fold in peaches.
  4. Pour batter into the ramekin.
  5. Mix crumble topping ingredients, and set on top of the cake batter.
  6. Bake for 50-55 minutes, or until a toothpick inserted comes out clean.
  7. Let cool and enjoy! Store refrigerated.
