Peach Crumble Cake

Makes 2 servings
Cake ingredients:
2/3 cup Proteinfull Baking Classic Yellow Cake Mix (loosely packed, 44.5g)
1 large egg
3 1/2 tablespoons water
1 tablespoon oil or unsweetened applesauce
1/3 cup cut peaches (fresh or frozen*)
Crumble topping ingredients:
3 tablespoons almond flour
4 teaspoons erythritol
1/4 teaspoon ground cinnamon
1/2 tablespoon butter, softened
Instructions:
- Preheat oven to 325°F (use an oven thermometer for best results). Line the bottom of an 8oz ramekin with parchment paper, then spray with non-stick cooking spray.
- Mix cake mix, egg white, water, and oil or applesauce.
- Fold in peaches.
- Pour batter into the ramekin.
- Mix crumble topping ingredients, and set on top of the cake batter.
- Bake for 50-55 minutes, or until a toothpick inserted comes out clean.
- Let cool and enjoy! Store refrigerated.
